Chef Manager

About The Job:

An exciting opportunity has arisen to work for our client, a care home in Eastbourne. They are looking for a permanent, full time Chef Manager, responsible for all catering/kitchen staff within the catering department

You will be responsible for the preparation and delivery of high quality nutritious meals to residents providing them with choice and ensuring that the residents’ catering needs, that are consistent with their dignity, wellbeing and the principles of person centered care, are met. All within an allocated budget

The salary is £28k p/a. The hours are 40 hours per week, over five days, working every other weekend on a two week rolling rota


  • Design, implement and manage the rota for catering staff
  • Coordinate and delegate work and review staff performance through supervision and appraisal of staff that report into the post holder
  • Ensure that all regulatory requirements are met in the preparation and delivery of food
  • Promote, monitor and maintain best practice and ensure that staff understand and adhere to internal policies and procedures at all times
  • Minimise the use of pre prepared foods and utilise seasonal produce wherever possible
  • Operate and supervise catering staff in order that all purchases are controlled within the specific budget allocated to include minimising waste
  • Ensure that food is received, stored, prepared and served in accordance with current good practice and such that due diligence can be demonstrated
  • Design, preparation and provision of menus, meals and snacks to ensure they are varied, nutritionally balanced and suited to the needs and wishes of residents in the home
  • Be responsible for the purchasing, through the home's preferred supplier, of goods and services necessary for the provision of catering within the allocated budget
  • Implement health and safety measures within the catering department
  • Work flexible hours to cover early and late shifts to include one weekend in four
  • Ensure the catering equipment is maintained as specified by respective manufacturers
  • Continually develop own skills and knowledge in own area of expertise and contribute to the development of catering staff
  • Ensure that all department staff, including the post holder, are trained within the requirements of current legislation and the home's policy and to ensure staff undertake all mandatory and internal training as required by the home’s contract terms and conditions
  • Participate in management and other relevant meetings within the home
  • Provide Leadership to the staff and lead by example
  • Actively seek resident feedback on the catering service
  • Be involved with recruitment and retention
  • Report and assist the manager in all issues relating to the job role, residents and staff
  • Ensure that any issues relating to menus, food and or suppliers is brought to the attention of the manager
  • Undertake such other duties appropriate to the post and the needs of the home in order to develop and maintain service delivery. However the home will be mindful at all times to ensure that these duties are not so onerous as to prevent the Catering Manager fulfilling their role

Essential Qualifications 

Qualification in catering - City and Guilds or NVQ level 3 or 4 qualified or equivalent or working towards CIEH Level 3 award in food safety

 Desirable Qualifications

  • Qualification in nutrition
  • CIEH Level 4 award in food safety

 Essential Experience

  • Managing and developing a staff team including regular induction, supervision and appraisal
  • Managing budgets
  • Managing staff rotas
  • Catering for people in large numbers
  • Catering for specialist diets
